For cooking you must have:

  1. Wash the chicken, remove the internal organs if you have chicken with them and dry with paper towels.

  2. Next, the chicken should be rubbed with salt and spices.

  3. Prepare the sauce by mixing the juice of 1 orange, mustard and honey.

  4. Now it is important to properly rub the chicken with the sauce. In order for the meat to be soft and very tender, it is necessary to rub the chicken under the skin. To do this, you need to separate the skin from the meat in some places and rub well with a sauce of mustard, juice and honey. The same way we rub the chicken inside and on top of a good layer of sauce.

  5. Prepare the pillow. Cut the orange and the onion into slices, , the garlic into cloves, take apart one sprig of rosemary into needles and put it in a heated pan with olive oil.

  6. Place the chicken on the pillow and put it in a preheated oven at 180-200 ℃ for 1.5-2 hours.

  7. It is necessary to periodically (preferably every 10-15 minutes) pour the juice over the chicken to keep it juicy. When the skin of the chicken begins to burn, you need to cover the chicken with foil.
